Home-grown architecture practice DP Architects and local restaurateurs The Food Explorer Group, owners of popular bistro GRUB, have just revealed a joint F&B venture – redpan.
This new restaurant will see a partnership, a “love affair” between design and food. This partnership has allowed both parties from very different industries to focus on their strengths of design as well as food development respectively, each bringing their best to their table. Some of the dishes playfully reflect this “love affair”, in particular the dishes from the Grill, featuring premium cuts of meat like 100% Natural Pork Belly ($21), Beef Short-rib ($32) and Corn-fed Magret Duck Breast ($24) served on beautiful marble slabs, a material not commonly used in the plating of dishes in restaurants, yet made possible in this restaurant combining the best of design with food.
Though from seemingly very different industries, the common thread linking this partnership is the fact that both are proudly local, home-grown companies willing to experiment, together delivering a 100%+100% Singaporean effort. Beginning with a simple wish to share good food in a good setting, DP Architects designed redpan as a chic yet comfortable open-plan, multi-functional space that serves as a “creative living room” where ideas can be incubated and exchanged over a casual meal.
Distilling architecture down to its most pared-down forms, the design focuses on playing with simple and basic materials through architectural contouring, such as the use of purpose-built plywood for walls, screed for flooring, concrete and basic geometrical elements like clean lines, curves and orthogonal furniture. The fittings and furnishings are not seen anywhere else – from tables, chairs to intricate lighting – just like the food.
The focus of the menu conceptualised by the GRUB team is “Local Fun Dining”, with a strong spotlight on local ingredients and familiar flavours, served up in creative interpretations of modern dishes.
The dishes have been specially created for redpan and include Lup Cheong Mac & Cheese ($14), a comforting dish of macaroni tossed in a cheesy béchamel, studded with bursts of flavor from lup cheong, a local cured Chinese sausage known for its sweet yet savoury flavor, and fragrant curry leaves. Also not to be missed is the Prawn & Hae Bee Hiam Pasta ($15), an addictively spicy dish featuring tagliatelle tossed in a house-made spicy shrimp paste from Chef Mervyn Phan’s grandmother’s recipe.
redpan will also serve a selection of pocket-friendly familiar local favourites perfect for lunch, like Hainanese Pork Chop ($13), Temasek Chicken Chop ($12) and Fish and Chips ($15), as well as a selection of bar bites like Pork Pops with Tangy Mango Sauce ($9) and Tuckshop Fried Chicken Wings ($9), great for after-work drinks.
For desserts, the restaurant’s Sticky Date Pudding ($9) uses local red dates in its cake base as it offers less cloying sweetness and more pronounced date flavor. Another dessert to try is the Banana Milo Dinosaur Donuts ($8), featuring handmade fluffy banana donuts with layers of differing textures of condensed milk, Milo powder and crushed hazelnuts.
The “Local Fun Dining” approach also extends to the drinks front, with a delightfully refreshing Sour Plum Shandy ($12), a playful alcoholic concoction of sour plum, wheat beer and fresh lemonade. The restaurant will also serve local Archipelago beers on tap, as well as a range of Pin Tea, from a bespoke local tea merchant with special blends like “Marina Magic”, “Tekka Minute” and “Sentosa Sunrise”.
